  • juice of one orange.

Preparation:

  1. Squeeze the juice from the orange, remove the seeds. Pour it into a bowl with kefir.
  2. Add soda, flour and sugar. Mix everything.
  3. Melt the butter in the microwave, cool and pour it into the dough.
  4. Let it brew a little, after which you can bake the cupcakes.
  5. Grease the multicooker bowl and place the dough there.
  6. Turn on the “Baking” mode. Cooking time depends on the multicooker model. After the signal about the end of cooking, remove the bowl, cool slightly and turn it upside down. Knock lightly.

The cake takes longer to cook in a slow cooker than in the oven. However, this is a good alternative if you don’t have molds and an oven. If you don’t have time, try making a cupcake in a mug; it takes only 3 minutes to cook in the microwave!

Eggless Banana Cake

The banana taste of baked goods will not leave indifferent even gourmets who are accustomed to tasting restaurant dishes. The taste of the cupcakes is great, and if you tell them that they are egg-free, even vegetarians will appreciate it.

Let's take:

  • at least 4 overripe bananas (it’s better to take overripe ones 😉) - I usually take 5-6 pieces
  • 300 gr. flour
  • 150 ml vegetable oil (or melted butter - if not Lent)
  • 1/4 teaspoon salt
  • 100 grams of sugar (a little less is possible)
  • 1 dessert spoon of baking soda, slaked with vinegar or lemon juice

I usually bake this banana muffin with eggs, but since it's Lent, I decided to experiment and bake a banana muffin without eggs. And my experiment was a great success, I think.

The most important thing here is bananas. They play a key role.

And I usually take them either very soft or medium soft. But not those that you can eat for pleasure. Now, when my son either wants to eat bananas or doesn’t, it often happens to me that we don’t have time to eat bananas... And then I make this cupcake...

Let’s peel the bananas, mash them a little with a fork (you can, of course, do this with a blender, but personally I’m too lazy to wash it afterwards (cough cough), and I prefer the taste when there are pieces of banana in the cupcake itself. 😉

As you can see, I got bananas from very dark to quite decent on the outside - this top banana happened to be here by chance - there were simply no more overripe ones, and those that were were not enough...

So, mash the bananas with a fork and set them aside.

In a large bowl, mix flour, salt and sugar.

Then add a dessert spoon of baking soda, slaked with vinegar (this time I slaked it with vinegar, but usually I still prefer to do it with lemon juice).

Turn on the oven to 180 degrees and continue.

Add odorless vegetable oil to the flour and mix the oil into the flour.

Don't worry about it being too thick. After all, overripe bananas are quite wet... And they quickly do their job.

Add mashed bananas to the butter-flour mixture and stir until smooth.

As you can see, the dough turns out to be quite liquid.

Pour it into a mold greased with vegetable oil and place in a preheated oven for about 40-50 minutes.

Despite the fact that I preheated the oven to 180 degrees, I bake the cake itself at 160-170. Look at your oven, because here you need to focus on a specific oven, which only you can know better. It is important that the dough does not bake too much before it has time to rise. That's why I prefer slower baking...

This is such a handsome, tanned handsome guy in the end. 😉

There are two ways to determine whether a cake is ready - I usually look if the edges of the cake or cupcake have already “moved away” from the pan, then it’s ready. But to be sure, of course, it’s better to check with a “dry match” (you can use a toothpick), just keep in mind that pieces of bananas can get caught and they will show “wet”...

Eggless Banana Cake ready! You can sprinkle it with powdered sugar or spread it with jam, but although I am a lover of sweets, I am not that much of a fan. I like this cupcake just like that - without any coating or decoration. 😉 The cake is quite moist, sweet and has a strong banana flavor.

Then, when I run out, I will definitely post a non-lenten version of this cupcake. It is also tasty and worthy of attention. 😉 Although, I admit, I personally even like this one better.

First, take the required amount of products and leave them to heat at room temperature. I recommend doing this 2-3 hours (or earlier) before you start cooking, so you don't have to wait. The butter can be placed on a warm pan to soften it.

When all the ingredients are not cold to the touch and the butter is soft, let’s start preparing a delicious cake.

Before starting cooking, turn on the oven, we need to warm it up thoroughly.

To make our cake fluffy, we first start whipping the butter itself. When we get a homogeneous fluffy mass, and this will take no more than 2 minutes at medium speed (or 5-8 minutes with a broom), we will begin to add sugar and vanilla to it. Add them in 3-4 tbsp portions. l. and beat for 2 minutes. After 3 times, add half of the milk, and then before the last batch of sugar, the rest.

Your mixture will be thick, the milk will make the process easier and the mixture will have a fluffier consistency. If you take food that is too cold, the oil may separate. It's okay, this won't affect the quality of our dessert.

Now set the mixture aside and move on to the bananas. Peel them and mash them into a puree with a fork. There is no need to make the puree too smooth. So, the cupcake will be tastier.

At the next stage, add bananas to the sugar-butter mixture and beat with a broom (you can use a mixer, but no more than 1 minute).

Now break the eggs into the mixture and beat again for 1 minute.

Add the flour last. It must first be sifted through a sieve. We do this not to remove lumps, but to make our dough more airy.

Flour should also be added little by little (3-4 tablespoons at a time). Perhaps your dough will take less flour than stated in the recipe - that's okay. It should be thick and resemble thick sour cream or cream.

Now all that remains is to prepare the form. I usually coat it with butter. But very good and refined vegetable.

Pour the dough into our mold and place it in a preheated oven on the middle shelf. The temperature in it should already be 180 C.

Bake the cake for 30–40 minutes. You can’t look into the oven earlier than half an hour later. This should only happen after the cake has a golden brown crust.

To check the readiness of the dough, use a thin toothpick or other wooden stick. Having pierced the cake to the bottom and pulled it out, you need to ensure that the stick is dry, without any signs of raw dough.

The banana cake will have dark brown, delicious dots inside - this is because the banana changed color during heat treatment.

Cooking tips:

  • The butter will not clump if the milk is at the same temperature (30 C).
  • If the dough comes out liquid, add a little flour, if too thick, add milk.
  • Take a special cake pan - it will bake better in it. If it is not there, pour the cake into any form, with a layer no more than 5-6 cm.

Banana muffin with walnuts and kefir

Banana cake has many variations. One of the most magnificent is prepared with kefir. If you add walnuts to it, you will get a lush and very tasty dessert. At the same time, the cost of products for him will not be high. The delicacy banana cake with kefir will appeal to both adults and children.

Ingredients:

  • Bananas – 2 pcs.;
  • Flour – 0.4 kg (2 tbsp.);
  • Kefir – 200 ml (1 tbsp.);
  • Nuts – 1 tbsp. (purified);
  • Sugar – 0.2 kg (1 tbsp.);
  • Eggs – 2 pcs;
  • Oil (vegetable, odorless) – 100 ml (1/2 tbsp.);
  • Baking powder – 12 g (1 tsp);
  • Vanilla sugar – 5 g;
  • Powdered sugar.

Cooking method:

  1. We will prepare the dough in several stages. For baking, prepare food at room temperature. Don't forget to turn on the oven, it should be preheated by the time we put the cake in it.
  2. First, take the amount of sugar and eggs, add vanilla and beat everything until white foam. Our mixture should double in volume (3-4 minutes with a mixer).
  3. Place the butter and kefir mixture in a bowl and beat everything again for the same amount of time. Separately, in a plate, mash the bananas until puree and also add to the mixture.
  4. Now let’s set aside our mass and move on to the dry products: sift the flour (to make the dough fluffy) and add baking powder to it.
  5. The next stage is combining the components. Spoon the flour into the bowl with the liquid mixture. But not all at once, but gradually: add 3 tablespoons of flour, beat for 1 minute, then add more and so on until the prepared flour and baking powder are gone.
  6. The last ones to go into the dough are the nuts; it’s best to lightly fry them in a dry frying pan. Before adding to the dough, be sure to blow thoroughly to avoid any husks.
  7. The cake batter should resemble thick sour cream. Let it sit for about 10 minutes, and during this time we prepare the mold: warm it up a little and grease it with vegetable oil.
  8. Bake banana cake in an oven preheated to 180 C. Place in already preheated oven and bake for 45–50 minutes. The finished cake can be sprinkled with powdered sugar.

Cooking tips:

  • The dough should be exactly the consistency of thick sour cream; if it’s liquid, feel free to add flour; if it’s thick, add kefir.
  • Baking powder can be replaced with soda, for this recipe you need 5 g, that's half a teaspoon.
  • Check for doneness with a dry stick or toothpick, but do not open the oven until 40 minutes after the start of cooking and only after the top has browned.
  • These cupcakes are super fluffy and great for making smaller cupcakes. They need to be baked for 10–20 minutes.

  • Dark chocolate – 100 g (or bar);
  • Milk chocolate – 50 g (0.5 bars);
  • Bananas – 3 pcs. (if small);
  • Butter (butter) – 150 g;

  8. It's time for chocolate chips and mashed bananas. Add them to the dough and mix until smooth. We get a thick and viscous consistency, a little thicker than pancakes.
  9. To ensure that the baked cake comes out easily, line the pan with baking paper.
  10. We have already preheated the oven to 180 C, put the cake in and bake for 35–45 minutes. The peculiarity of this version of banana cake will be its slightly moist, loose consistency when finished.
  11. To get it, you need to remove the baked goods from the oven in time.
  12. After 30 minutes, test with a wooden stick (or toothpick) for doneness. If there is any batter left on it, let it sit for up to 7 minutes. If there is only melted chocolate on the toothpick, take it out and our cake is ready.

Cooking tips:

  • Be sure to add salt, it will enhance the taste of chocolate.
  • It is important not to dry out the cake; do not leave it in the oven after the process is completed.

    Let's prepare the raisins: sort them out, rinse them with cold water, and then pour boiling water over them and let them brew (10-20 minutes). Don’t forget to place the swollen raisins in a colander to drain.
  2. Let's turn on the oven. And while it is warming up, knead the dough.
  3. First, soften the butter to a liquid consistency, leaving a small piece for greasing the mold. I soften the butter in the microwave (a little over 1 minute). But this can be done successfully on the stovetop. Just be sure to let it cool to room temperature.
  4. Now in a large bowl, beat 3 eggs and sugar with a mixer. The mass should become white and airy (this will take 3-4 minutes).
  5. Add the cooled butter, vanilla, salt and sour cream to the resulting mixture and beat again for 2 minutes; if using a mixer or a broom, the procedure will take longer. Our mass should become airy again.
  6. Now add raisins and banana puree to it. Bananas need to be peeled and mashed with a fork. Stir a little again. Now we only need the uniformity of the ingredients.
  7. It's time to add flour and baking soda or baking powder. Don’t forget to sift the flour, and add baking powder or slaked soda to the already sifted flour.
  8. Pour this mixture into our bowl with the preparation in small portions, 2-3 spoons each, and stir. Now our dough will have the consistency of thick pancake dough or like thick cream.
  9. Let's leave it to stand for a while and prepare the baking dish ourselves. It should be at room temperature. We will grease the bottom with butter and sprinkle flour on top.
  10. Pour the dough into the mold and put it in the oven. We bake on the 3rd shelf, at 180 C. After 30-35 minutes, you need to check the degree of readiness; the first test test will be the presence of a golden brown crust on top; if there is none, do not open the oven until it appears.
  11. Then use a wooden skewer to pierce the cake. A dry stick without traces of dough will indicate readiness. If there is dough on a stick, let it sit for another seven minutes.
  12. The final step in cooking will be sprinkling with powdered sugar. You can serve.

Cooking tips:

  • Be very careful with the oven. Take a hot form only with special oven mitts.
  • The powdered sugar will stick to the cake better if you let it cool for about 15 minutes.
  • Mash the bananas just before adding them to the batter. It will be lighter.
Lenten banana muffin

In winter you always start counting calories, because our movement in the cold season is significantly limited. But I still want something sweet. For many people with a sweet tooth, a recipe for a lean banana muffin will be the solution. To call it lean would not be entirely correct. But there is a considerable limitation in the number of calories compared to a regular cupcake, and it is also a healthy food.

This lean banana cake will taste different from the traditional one, but it has its own unique notes and will appeal to many. You will want to cook it not only during Lent.

Ingredients:

  • vegetable oil – 40 ml (3 tbsp.);
  • sugar – 100 g (0.5 cup);
  • water – 50 ml (1/4 cup);
  • bananas (net weight) – 190 g (1.5–2 pcs.)
  • whole grain flour – 80 g (0.5 cup)
  • premium flour – 80 g (0.5 cup);
  • baking powder – 1.5 tsp. or 0.5 liters of soda;
  • cinnamon - on the tip of a knife;
  • dried apricots, nuts, seeds (your choice or all together) – 0.5 cups.

Cooking method:

  1. First, turn on the oven, and while it is heating, prepare the dough. We also need to wash and chop the dried apricots and raisins if we use them. After washing, it’s very good to pour boiling water over them and let them stand for 15 minutes.
  2. Peel the bananas and mash them in a bowl with a fork, add sugar, soda and cinnamon and beat until foamy. Now add water and oil. And stir well again.
  3. Now mix both types of flour and add little by little to the mixture with a spoon.
  4. Now let’s combine the dough with seeds, dried apricots, nuts (whatever you have). And mix again. We will get a thick dough, like cream with nuts.
  5. It is better to line the mold with baking paper, but you can also grease it with vegetable oil.
  6. Place in the preheated oven and bake for 40 minutes.
  7. We check readiness when a golden brown crust appears on top, but not earlier than after 35 minutes. If the toothpick shows no traces of dough, the cake is ready. If there is dough on the stick, then let it sit for another 10 minutes. But you can do it this way: turn off the oven and leave the cake in it until it cools completely.
  8. You can sprinkle cinnamon sugar on top for decoration.

Cooking tips:

  • If you bake a cake with different varieties of seeds or with different varieties of nuts, then each time you can get a new dish.
  • For the filling you can use dried apricots, raisins and prunes. It is better to steam them, and then dry them well and only then cut them into small pieces.
  • Remember that the oven is very hot. Be sure to use special oven mitts.
