How to cook fried chicken liver in egg batter

Break a chicken egg into a bowl, add flour, salt and pepper. Whisk the mixture until smooth and foamy. That's what I did in this recipe. But chicken liver in egg batter will become more tender if you first separate the egg white and beat with a mixer until thick foam with a pinch of salt. Mix this foam into the yolk batter, gently stirring with a spatula from bottom to top.

Pour in mineral water and beat a little more. If you don't have soda, plain cold water, milk or cream will do.

Do not cut chicken liver pieces into pieces or trim off the fat. They need to be washed and dried with a paper towel or napkins. Excess liquid will prevent even breading. Carefully check that there are no greenish or dark areas on the pieces - these are traces of the bitter bile of the bird. If there are any, cut them out with a knife or do not use such liver fragments at all. Then bread the selected pieces well in flour. Dip each one into the batter on all sides and immediately place in a hot frying pan with oil. If the pan is not heated enough, the batter will begin to stick to it.

Fry until golden brown on the bottom. Then turn the liver over and cook further. But now reduce the heat and cover the pan with a lid. Another couple of minutes and turn the pieces over again. Very soon they will be covered with an even blush and will be ready.

Cooking tips

  • Before breading, the liver should be slightly beaten with a kitchen hammer or the blunt side of a knife. This is done to even out the thickness of the piece and ensure better roasting. But you don’t need to get carried away, otherwise the pieces will lose their shape.
  • It is recommended to marinate the liver before starting cooking. To do this, take lemon or orange juice, spices “For chicken” or “For meat” and a little sunflower oil. Keep the pieces in the marinade for 10-15 minutes.
  • Instead of wheat flour for breading, if desired, use crushed oatmeal, sesame seeds or cereal flour (from millet, rice or buckwheat).

  • 500 gr. chicken liver;
  • 1 teaspoon of spice mixture (pepper, basil, curry, salt);
  • 1 egg;
  • 150 ml sparkling water;
  • 3 tablespoons flour + flour for breading;
  • oil for frying.

Sift flour into a bowl, add salt, pepper and other spices and mix. Break the egg and separate the yolk. Add the yolk to the flour mixture and pour in the sparkling water, stir. It is necessary to achieve complete homogeneity; there should not be a single lump in the mass.

Add a pinch of salt to the remaining protein and beat with a mixer until fluffy foam that holds its shape well. We spread the foam onto the dough and mix very carefully so that the whites do not settle.

Pour flour into a separate plate, add a little salt and pepper to it, mix. We wash the liver, clean it of veins, and cut it in half.
